Celebrate Organic Food with this tasty recipe that you'll want to serve time and time again. Serves 4
Ingredients
4 x Waitrose Duchy Organic Sirloin Steaks
2 x Waitrose Duchy Organic Medium Sweet Potatoes
1 x Waitrose Duchy Organic Red Pepper
1 x Waitrose Duchy Organic Red Onion
50g Waitrose Duchy Organic Kale
Half a tsp Salt
1 tsp Waitrose Duchy Organic Paprika
2 x Waitrose Duchy Organic Spring Onions - sliced
1 Quarter pack of fresh Chives - Chopped
4 x Waitrose Duchy Organic British Free Range Eggs
4 x tbsp Vegetable / Sunflower Oil
Method
- Remove the steaks from their packaging and allow to breathe for 10 minutes at room temperature
- Peel the sweet potatoes and dice in to cubes no bigger than 10mm
- Dice the red pepper and red onion in to cubes no bigger than 10mm
- Cook the steaks as per the instructions on pack, and allow to rest in a warm place for 10-15 minutes
- Whilst the steaks are resting, add 1 tbsp of oil to a suitably sized pan and pre-heat over a high heat
- Add the cubed sweet potato to the pan, stir occasionally for 5-6 minutes until they begin to colour
- Add the red pepper and red onion to the same pan and cook for a further 2-3 minutes
- Add the salt and paprika to the pan and cook for a further minute
- Finally, add the kale with a splash of water to the pan (this will help to wilt the kale) and cook for a final 1-2 minutes
- Remove the pan from the heat and in a separate frying pan add 1 tbsp of oil
- Preheat the frying pan over a medium heat, then add the eggs and fry to your liking
- To serve, place the hash on to a plate, place the steak on top (sliced if preferred) and top with the fried egg.
- Garnish with the spring onion and chopped chives.
