We are delighted to announce the launch of two brand new
pre-packaged joints for the Waitrose Christmas range.
Alongside the specialty Highland products which we provide
annually for the festive season, this Yuletide will see Waitrose offer two new
specialty products – a corner cut topside and a venison silverside, both
packaged with flavoured butters and herbs. These products are the result of
months of hard work from our dedicated New Product Development team, who offer
brief descriptions of the new products below:
The corner cut topside
is a fabulous roasting joint owing to its natural proportion of fat, which
melts when cooked and ensures the beef stays tender and succulent. We’ve paired
the corner cut with a rich garlic and chive butter which adds a delightful
decadence and flavour to the beef, as well as rosemary, bay, and thyme –
classic, seasonal British herbs which permeate the meat during cooking,
resulting in an outstanding flavour profile.
For our venison, we’ve
used a silverside joint as the base, which is slashed by our butchers to create
a cavity in which to place the sour cherry and port butter. This butter has
been a great hit when paired with our venison steaks and we think it works just
as well in the joint – there are few things as quintessentially Christmassy as
port, and matched with the tender venison, this is a joint which packs festive
flavour into every mouthful – just try not to think of Rudolph when eating it!
